Gluten-free for all is a false trend. Gluten is harmless to most people. Using gluten-free pasta does not make your diet healthier or more effective. On the contrary, it deprives you of essential amino acids. If you do not have individual intolerances, eat regular durum pasta in moderation. If anything, hard varieties are those that need to be cooked for more than 8 minutes. The exception is small vermicelli. I tell more about durum pasta in my Telegram channel .
